It is matured in three types of barrels: ex-bourbon, oloroso sherry and mizunara oak casks.Shibui Pure Malt Japanese Whisky Tasting NotesNose: Candied walnut, chocolate covered raisins and maple syrup, followed by soft, malty cereal notes.Palate: n the palate those elements all come through – though perhaps not the dustiness! The mix of spice and sweetness is still there, but in the very subtle way that Shibui promises, and there are really pleasant hints of coffee and chocolate too.Finish: An elegant, long finish.
